This week’s Happycoffeepeople is Siew, a Starbuck’s Barista that lives in California, a real barista with a big passion for coffee and latte art!<\/em><\/h3>\n

Hi Siew, how are you? Can you introduce yourself to our students?<\/h4>\n

Hi Guys! I have been a barista at Starbucks<\/strong> in Livermore, California for the past 3 years and 5 months.\u00a0I only found my passion in latte art since last year 2018.<\/strong><\/p>\n

I attended the One-Week Coffee Route Course<\/a>, Espresso Machine Maintenance and\u00a0\u00a0Reparation Course<\/a>, Italian Basic Barista Course<\/a> and Latte Art Grading System<\/a><\/strong> course\u00a0during May 2019 at the Espresso Academy Firenze in Florence, Italy.<\/p>\n

Every one of the trainers<\/a> (Marco, Robert, Simone, Ilaria, Gabriel and Helena) are so professional, passionate, enthusiastic, knowledgeable, informative and inspiring.<\/p>\n

What did you learn in Espresso Academy was important for your coffee career?<\/h4>\n

Espresso Academy<\/strong> is really eye catching for me. It was the greatest experience in my life to learn so extensively about coffee.<\/strong>\u00a0\u00a0From seeds to cups, there are so many things\u00a0to learn.\u00a0\u00a0I never knew that:\u00a0\u00a0an extraction time for an espresso is 26s and 30g out, what Specialty Coffee is, Brazilian Cupping, channeling,\u00a0brewing ratio,\u00a0Hario V60, roasting first\u00a0\u00a0crack, famous maya reactions, sensorial analysis, green coffee beans Robusta and Arabica\u00a0etc.\u2026!<\/p>\n

My greatest passion is in latte art<\/strong>, and I came to Espresso Academy to learn and take the Latte Art Grading System Exam.\u00a0\u00a0I passed the White Jug Exam for the LAGS<\/strong><\/a>.\u00a0\u00a0My\u00a0trainer Simone\u2019s expertise is in Latte Art Skills and\u00a0he is an Official LAGS Certifier.<\/a> The\u00a0\u00a0\u00a0techniques I learned from the school are something I would never learn from my work.\u00a0\u00a0I\u00a0appreciated the theories he taught; I was able to steam the milk correctly regardless of the\u00a0cup sizes.<\/p>\n

The One-week coffee route course<\/strong>, especially the Coffee and Cupping Course captured\u00a0my heart.\u00a0<\/strong>\u00a0We learned different types of flavors according to the\u00a0SCA Coffee Flavor Wheel<\/a>.\u00a0The greatest impact of the course is that I will be able to identify and describe aroma, flavors and body.\u00a0\u00a0I never thought that sensory analysis played an important\u00a0role in\u00a0creating a good quality of coffee.<\/p>\n\n\t\t\t
