For a few years there was a growth of the Starbuck model and of its copies (to the birth\/death of these copies we dedicated the below video ):<\/p>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe loading=\"lazy\" title=\"EP 25: Ha ancora senso aprire un locale modello Starbucks?\" width=\"1220\" height=\"686\" src=\"https:\/\/www.youtube.com\/embed\/B2YOkxxAPzk?start=2&#038;feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe>\n<\/div><\/figure>\n\n\n\n<p>Then Starbucks (the real one!) arrived in Florence. The copies closed and specialty coffees arrived!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">What\u2019s a specialty coffee? <\/h2>\n\n\n\n<p><strong>Complex question! <\/strong>To put it simple, a specialty coffee is a caf\u00e9 focused not only and <strong>not always on high quality coffee,<\/strong> but also and above all on <strong>traceable coffee<\/strong>, which refers not to the brand of a roastery, but to the place. At the farm where the coffee is grown, we will therefore not find a Lavazza coffee, but a washed red bourbon from Finca Esperanza in Guatemala, perhaps complete with the name of the gentleman who manages the plantation.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignleft size-large is-resized\"><img decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/espressoacademy.it\/wp-content\/uploads\/2023\/03\/specialty-coffee-1024x683.jpg\" alt=\"\" class=\"wp-image-52844\" style=\"width:472px;height:315px\" srcset=\"https:\/\/espressoacademy.it\/wp-content\/uploads\/2023\/03\/specialty-coffee-1024x683.jpg 1024w, https:\/\/espressoacademy.it\/wp-content\/uploads\/2023\/03\/specialty-coffee-300x200.jpg 300w, https:\/\/espressoacademy.it\/wp-content\/uploads\/2023\/03\/specialty-coffee-768x512.jpg 768w, https:\/\/espressoacademy.it\/wp-content\/uploads\/2023\/03\/specialty-coffee-219x146.jpg 219w, https:\/\/espressoacademy.it\/wp-content\/uploads\/2023\/03\/specialty-coffee-50x33.jpg 50w, https:\/\/espressoacademy.it\/wp-content\/uploads\/2023\/03\/specialty-coffee-113x75.jpg 113w\" sizes=\"(max-width:767px) 700px, (max-width:1024px) 100vw, 1024px\" \/><\/figure>\n<\/div>\n\n\n<p>In addition to this, the packets of coffee used do not report indications of &#8220;<strong>medium body and high aroma&#8221;<\/strong>, indications that have practically no technical sense, but defined aromatic notes and above all, often, <strong>a score called &#8220;cupping score&#8221; <\/strong>which defines the degree of quality technique of the best coffees. In short, places where coffee is not a service, a certain amount of caffeine, but a real experience, placed halfway between sensoriality and storytelling.<\/p>\n\n\n\n<p>This type of coffee shop, even if less numerous compared to the classic bars (and this might always be!) is still growing.<\/p>\n\n\n\n<p>An updated map on where to find specialty cafes is always available at our school, the Espresso Academy, which is a true center of specialty culture, such as courses, micro roastery (with the Caffelab brand) and with the wonderful possibility of tasting a nice espresso while visiting our roasting facility.
