Sometimes the most meaningful collaborations in coffee don\u2019t start from a structured plan \u2014 they start from people, conversations, and a shared vision.<\/em><\/h2>\n\n\n\n

That\u2019s exactly what happened when we met Naji and Alexander from Catboat Coffee<\/strong>, a Lebanese caf\u00e9 and restaurant based in Martha\u2019s Vineyard, USA. From the very beginning, it was clear that this wasn\u2019t going to be just a training experience. There was something deeper: a strong identity, a clear philosophy of hospitality, and a genuine desire to grow.<\/p>\n\n\n\n

And that\u2019s where this journey began.<\/p>\n\n\n\n

A Week in Florence: More Than Just Training<\/strong><\/h2>\n\n\n\n

Naji and Alexander joined us in Florence for one of our most complete and immersive programs: the One Week Coffee Route<\/strong>.<\/p>\n\n\n\n

This course is designed to offer a full overview of the coffee world, combining technical training with a broader understanding of coffee as a product, a craft, and a business.<\/p>\n\n\n\n

During the week, we worked closely together on:<\/p>\n\n\n\n

  • espresso extraction <\/strong>and dialing in<\/strong><\/li>\n\n\n\n
  • understanding balance<\/strong>, body, and flavor clarity<\/strong><\/li>\n\n\n\n
  • tasting different coffees<\/strong> and building a sensory vocabulary<\/li>\n\n\n\n
  • improving workflow<\/strong> and consistency behind the bar<\/li>\n\n\n\n
  • exploring roasting fundamentals<\/strong> and coffee selection<\/li>\n<\/ul>\n\n\n\n

    But what made this experience truly valuable was not just the content \u2014 it was the exchange. Every session became a dialogue. We talked about their caf\u00e9, their customers, their standards, and the direction they want to take in the future.<\/p>\n\n\n\n

    It\u2019s a place where specialty coffee meets Lebanese culture<\/strong>, food, and a deep sense of hospitality. A concept built around authenticity, where coffee is part of a broader experience.<\/p>\n\n\n

    This is something we immediately connected with. Because at Espresso Academy, we believe that great coffee is not only about technique. It\u2019s about identity, consistency, and the ability to create something that people remember.<\/p>\n\n\n\n

    Working with Naji and Alexander meant understanding what makes their project unique \u2014 and finding ways to elevate it without changing its nature.<\/p>\n\n\n\n

    From Training to a Real Project<\/strong><\/h2>\n\n\n\n

    What stood out the most during the One Week Coffee Route <\/strong>was their mindset.
    They didn\u2019t just absorb information \u2014 they questioned, adapted, and continuously related everything to their daily operations.<\/p>\n\n\n\n

    This is where training becomes something more. Throughout the week, we started building together:
    refining espresso profiles, improving consistency during peak hours, structuring the coffee menu, and aligning quality with customer experience.<\/p>\n\n\n\n

    Very naturally, this evolved into something beyond a course. It became the foundation of a long-term collaboration.<\/strong><\/p>\n\n\n\n

    Looking Forward: A New Project in the Boston Area<\/strong><\/h2>\n\n\n\n

    One of the most exciting aspects that emerged from this experience \u2014 and clearly discussed in the interview \u2014 is the development of a new Catboat Coffee location in the Boston Area<\/strong>.<\/p>\n\n\n

    This is not just an expansion. It\u2019s a new project where everything we started working on together will take shape from the very beginning: coffee quality, workflow, training, and overall concept. <\/strong>
    And this is where Espresso Academy will play a key role.<\/p>\n\n\n\n

    We will be directly involved in supporting the development of the coffee program, contributing to the structure, training, and quality standards of the new location.<\/p>\n\n\n\n

    For us, this represents the most meaningful outcome of any training experience:
    when education turns into a real project, and a shared vision becomes something concrete.<\/p>\n\n\n\n
