Sei affascinato dalle estrazioni in filtro? Dal coffee brewing? Si tratta di un'area del caffè dove cambiando alcuni fattori chiave come l’acqua, la tecnica (percolazione, infusione, ibrido etc), il tool di preparazione, il materiale (stoffa, carta, metallo) e naturalmente il caffè si ottengono esperienze gustative straordinarie.

Il corso si svolge in due giornate come richiesto dal livello intermedio della certificazione brewing SCA, a cui il corso da accesso.

Programma del Corso Avanzato Coffee Brewing ed Estrazione del Caffè in Filtro/ Brewing SCA Intermedio

1° GIORNATA: Scienza, Acqua e Controllo della Macinatura

  • L'uso delle Brew Chart e l'identificazione della zona di estrazione ideale.
  • L'uso pratico del rifrattometro per la misurazione del TDS (Solid Totali Disciolti).
  • Calcolo e significato di Strength (forza) ed Extraction Yield (resa).
  • Il ruolo cruciale dell’acqua e la sua composizione chimica sulla dissoluzione.
  • Sessione Pratica: Estrazione con vari metodi (V60, Chemex) usando acque con diversi minerali.
  • Analisi della granulometria con il setaccio e il concetto di curva granulometrica.
  • Il concetto di macinatura bimodale e la gestione dei fines (polveri fini).
  • Sessione Pratica: Analisi della granulometria e dell'impatto dei fines sul gusto.
  • Discussione: Come la dimensione del chicco tostato influenzi la macinatura.
  • Pratica: Applicazione dei dati di Strength/Extraction ai profili sensoriali iniziali.

2° GIORNATA: Ottimizzazione, Metodi e Specialty Brewing

  • Pratica Avanzata: Ottimizzazione dell'estrazione tramite la modifica mirata della macinatura.
  • Laboratorio Acqua: Estrazione con vari metodi utilizzando acque con diversi contenuti minerali.
  • Troubleshooting: Misurare e modificare l'estrazione per correggere difetti di gusto.
  • Estrazione con diversi materiali di filtraggio (carta, metallo, stoffa) e il loro impatto aromatico.
  • Pratica: Estrazione con metodi avanzati come Syphon e Kalita Wave.
  • L'utilizzo delle brew chart per l'ottimizzazione della macinatura/tempo.
  • La modulazione dell’estrazione in un Cold Brew (metodi e conservazione).
  • Sessione Pratica: Analisi dei risultati ottenuti e valutazione comparata.
  • Analisi della consistency (coerenza) e della stabilità delle ricette.
  • Esercizi di preparazione a eventuale esame teorico e pratico SCA Brewing Intermediate. Pratica e test con altri caffè per gli studenti non interessati.

Certificazione SCA

Al termine di questo corso è possibile sostenere la certificazione SCA Brewing livello Intermedio. Chi intendesse prendere parte agli esami di certificazione è pregato di segnalarcelo al momento dell’iscrizione al corso.  Cosa troverai al corso di Brewing Intermedio

Durante il corso Brewing Intermediate SCA, avrai l'opportunità di sperimentare molte prove pratiche per prepararti all'esame Brewing Intermediate. Potrai esplorare estrazioni di caffè con diverse percentuali di estrazione e TDS per comprendere come regolare i parametri e ottenere la migliore tazza. 

Imparerai ad utilizzare con competenza il rifrattometro e la SCA Brewing Control Chart, esplorerai Brew Ratio, granulometrie e tempistiche di infusione.

Il mondo del brewing è pieno di esperimenti e dovrai preparare diverse tazze di caffè filtro utilizzando varie Brew Ratio. Questo ti consentirà di padroneggiare quelle che garantiranno una tazza di caffè in linea con i parametri della Gold Cup Standard SCA. Esplorerai diverse granulometrie e tempistiche di infusione per comprendere come la modifica di uno solo di questi parametri possa influenzare radicalmente il risultato in tazza.


Metodi di preparazione del caffè: il cold Brew 

Nel corso Brewing Intermediate SCA esplorerai anche il Cold Brew e l'impatto della temperatura sull'estrazione del caffè. Questo viene analizzato attraverso estrazioni a freddo e a caldo a varie temperature, utilizzando la Brew Control Chart e misurando i solidi disciolti.

Per comprendere meglio l'importanza dell'acqua nell'estrazione del caffè, verrai guidato in estrazioni di caffè filtro con diversi metodi (V60, Chemex, Syphoon, Kalita Wave), utilizzando acque con contenuti minerali variabili che permette di percepire le differenze organolettiche nella bevanda finale.

If you are looking for kindness, quality and wisdom, this is the place for you. Espresso Academy does not disappoint, every minute of the classes is worth gold and I would recommend it to anyone who needs to learn about coffee, both basic and advanced.

I had some great days there learning about coffee, coffee preparation, coffe tasting and more. The instructors have excellent knowledge and were very kind and helpful in every situation. Easy to reach by tram. I would totally recommend it if you're interested in coffee.

It was an amazing experience to take the technician course at the espresso academy of Florence. I attended it in November this year..just a fantastic experience..Roberto ,the lecturer, is an amazing guy ,delivering lessons in asuch easy manners.He also takes you for a lunch break to experience real Italian cuisine for little money.
Overall, I cam only recommend this course to anyone who wants to learn about coffee machines and have fun along the way.
Highly,highly, highly recommend.

Fantastic course on coffee machine maintenance, learned a lot in the short amount of time the course runs. Robert is a great teacher, easy going, explains things well and answers all questions. All other staff members we met during the course were also incredibly polite and welcoming. Well worth the travel.

It was fantastic 3 days of learning. It was one of the important learning experiences I had. Trainer was very professional, calm, respectful and friendly. If you are in coffee business, you must do one of their course depending on what you need. Highly recommend.

I’ve been planning to follow my passion for coffee with a professional training course and I found what I was looking for at The Espresso Academy. From the start Cristiana was very helpful for planning and booking this course for me, responding promptly and making it easier for my needs. Super recommended!!! Instructor was super nice, the content was engaging , I made my first espresso & cappuccino, it was an absolutely fun experience ?
An excellent experience, highly recommend to someone just getting into coffee. Very calm, patient and knowledgeable teachers with whom it was only pleasure to work with. :) 10/10
Took the two day advanced barista course and it exceeded my expectations. Great teachers, great content, and even though it was a short course we got plenty of time to practice actual coffee making without sparing milk. And a bonus is the opportunity to meet coffee students from all over the world, that most likely share similar goals to yours. Highly recommend for anyone getting into coffee business.

I've attended many courses at Espresso Academy Firenze and I loved it! The staff is incredibly friendly and the courses very nice structured. Theory and lots of practice and we could even visit the roastery! The whole place smells of coffee :) During the pandemic I've also attended a couple Online Courses which were great and the teacher answered all the questions. I totally recommend going there to learn about coffee and become friends with the most amazing teachers :) Hope to see you soon guys!!
