Online green coffee course program:
Chapter 01 -Intro - The Coffee Plant
Let's start by getting to know the genus Coffea and the "other species" such as liberica. Then we know the coffea plant and structure of the drupe.
Chapter 02 - Coffee History, Arabica and Robusta
Did the Arabica come first and then the Robusta? Well, this is an "anthropocentric" vision in reality, from a genetic point of view, the Arabian is the "daughter" of the Robusta; let's see the whole story.
Chapter 03 - Coffee Varietals
From species such as Arabica and Robusta to the infinite world of varieties and cultivars. How did the bourbon variety come about? What does SL34 stand for? Why are new coffee cultivars created?
Chapter 04 -Coffee Farming and Harvesting
A more or less selective harvest will make a lot of difference in the quality of the coffee. Starting from the seasonality of the harvest in the various countries, we arrive at picking, stripping and mechanical crops ...
Chapter 05- Processing Methods
Washed process for a more aromatic and acidic coffee, natural process for a fuller and sweeter cup. All that simple? No, there are intermediate methods, new fermentations and the attentions that must be had in this phase.
Chapter 06 - Classification by Size
One of the main forms of commercial classification of coffee is inherent in the size of the beans. Let's see the sieve system.
Chapter 07 - Classification by Defects
Primary and secondary defects, sorting between fermented grains and shells. Let's learn about coffee defects and the Specialty and New York grading systems.
Chapter 08 - The Coffee Market and Certifications
The international coffee market, from the futures system to how international shipments work: Fob, Ex works and Bill of lading. In this chapter we also know the Fair trade and organic certifications.
Chapter 09 - Storage, Shipping and Decaf
Jute, grain pro, vacuum… how the coffee is stored?
Again: dichloromethane, Co2 and other decaffeination systems. What does "decaffeinated" mean for the law?
Chapter 10 - Tasting for Quality Control
The latest classification system for green coffee is, of course, its taste. Let's see what the cupping protocols are and how they affect the classification of coffee. Also, we see how to organize and carry out a cupping session, a professional tasting session
