During this class, you will
- Engage in hands-on cupping sessions to identify the intensity of defects, evaluate the consistency of coffee quality.
- Learn to create and manage coffee blends that meet customer requests, including managing crops and stocks to ensure consistency.
- Sort and cup specialty coffees using the SCAA tasting card and understand how to define their price based on quality assessments.
This course allows access to the SCA grren professional exam, which is the last step before the procedure to become AST.

Professional SCA Green Coffee Program
With a theoretical part that further explores botany and coffee processes, the course is actually structured in a series of practical phases about:
- Cupping on the intensity of defects
- Cupping to define the consistency of quality
- Cupping for the evaluation of the freshness of the sample and the harvest year
- Create a coffee / blend that meets the customer's requests. The blend matching
- Manage a blend such as crops and stocks. The complementary coffees
- Sorting and cupping a specialty coffee with the SCAA tasting card
- Definition of the price of the latter coffee
* SCA suggests to have taken part of the Sensory intermediate SCA before to take this exam. It is also required to have taken part in the intermediate green level at least three months before.
Green Coffee SCA - Professional Level
At the end of this course it’s possible to part-take in the SCA Green Coffee Professional level exam, the last step before the procedure to become AST.
