COFFEE ROASTING BASIC COURSE / FOUNDATION SCA.
One day. Florence - July 16th, September 12th, October 15th 2026
A course for non-professionals and home coffee lovers, as well as a coffee roasting class aimed at those starting their professional career. From the right roasting machine for a small company, a micro roastery or a "home roaster" up to the stages of roasting: the cracking, degassing and coffee blending.
A large practical session on the roasting machine completes the course!
Valid for the SCA foundation exam.
COFFEE ROASTING ADVANCED COURSE / INTERMEDIATE SCA.
Two days. Florence - July 17th and 18th or September 14th and 15th 2026
The intermediate roasting course introduces you to the world of specialty coffee and the use of roasting software such as Artisan or Cropster.
In this class you learn to roast by following the roasting curves and fundamental concepts such as development time and rate of rise are introduced, even in the large practical sections. On a professional level, during the course we see how the use of software can allow us to rationalize and always offer the same quality to our customers.
Valid for the Intermediate SCA exam.
COFFEE ROASTING COURSE PROFESSIONAL SCA
Three days. Florence - July 23th, 24th and 25th or September 21st, 22nd and 23rd 2026
Three days full immersion for the highest level course in the world of professional roasting. Following the SCA protocol, this course continuously mixes roasting phases, with color measurement targets with the Agtron system, with tasting phases, to understand how the variations in the roasting profile are reflected in the final result.
This rigorous (yet rewarding) course is designed for individuals striving for top-notch quality!
Valid for the SCA professional exam.

How to roast coffee? Well, it seems simple, we just have to cook it until it turns from green and very hard to crumbly, grindable, and of a more or less dark brown color.

Roasting coffee means knowing how to choose the raw material and enhance its aromas, flavors, and body through the management of the different stages of roasting: drying, first and second crack, the development phase and more.

Home Coffee Roasting Methods Can you roast coffee at home?
Absolutely! Our grandparents did it with a stovetop roaster, and we can do it too, thanks to the myriad of systems available in the modern world.
For example, machines like the Gene Café or Ikawa, or even the many models of sample roasters used by roasting companies to test samples, are perfect for home use.
These machines, available in various price ranges (and which we explore, utilize, and assess during our courses), offer an immersive experience, allowing you to monitor temperatures at different stages through internal probes. You can also connect them to roasting software and easily track each phase. Because a passion deserves dedication!
What are the rules for coffee blending?
The coffee we drink, whether at home or in a café, is always, except in rare cases of very high-quality coffee, a blend of different coffees, different species or varieties, different cultivation regions and different processing methods.
Why is coffee blended?
Coffee, being an agricultural product, is prone to flavor variations influenced by different factors, starting from the vintage and climate, like wine.
Serving a different coffee would offer consumers a different taste experience To avoid this roasting company takes as a reference the taste it wants to offer its customers and "adjusts" the blend every year, changing coffees or percentages until reaching the reference organoleptic characteristics.
It's a complex activity that requires excellent skills as roaster and as taster, skills you'll start cultivating in our roasting and tasting courses.
