8 November 2017A New International Coffee Route in Espresso Academy!
Another International Coffee Route has just finished. This week started with the most important course for our future coffee experts: tasting!!
Only once you learn to professionally judge a cup of coffee you can also learn to improve it, so it’s essential to learn to recognise acidity from bitterness and to be able to describe the balance between them, the body of a cup and its aftertaste. After that we can talk about extracting as we did in the brewing course with our filter coffee specialist Helena Oliviero, who taught us everything about the percentage of extraction, the strength in TDS and all the ways we can control them with the different brewing systems.
But then of course we are in Florence… how can we talk about coffee and not explain a thing or two about espresso and cappuccino? Two days were dedicated to the preparation of these super italian drinks and the basics for practicing some Latte Art! We finished with a more technical course on roasting so that we could really understand the importance of this very delicate process.
It’s been a really fun week and we hope to see you all again here in Florence or (maybe even better) we’ll visit you in El Salvador, Malaysia, Israel, Hong Kong, Korea, Brazil, Lebanon or USA!
