Chapter 01 -Intro - The Coffee Plant
Let's start by getting to know the genus Coffea and the "other species" such as liberica. Then we know the coffea plant and structure of the drupe.

Chapter 02 - Coffee History, Arabica and Robusta
Did the Arabica come first and then the Robusta? Well, this is an "anthropocentric" vision in reality, from a genetic point of view, the Arabian is the "daughter" of the Robusta; let's see the whole story.

Chapter 03 - Coffee Varietals
From species such as Arabica and Robusta to the infinite world of varieties and cultivars. How did the bourbon variety come about? What does SL34 stand for? Why are new coffee cultivars created?

Chapter 04 -Coffee Farming and Harvesting
A more or less selective harvest will make a lot of difference in the quality of the coffee. Starting from the seasonality of the harvest in the various countries, we arrive at picking, stripping and mechanical crops ...

Chapter 05- Processing Methods

The international coffee market, from the futures system to how international shipments work: Fob, Ex works and Bill of lading. In this chapter we also know the Fair trade and organic certifications.

Jute, grain pro, vacuum… how the coffee is stored?
Again: dichloromethane, Co2 and other decaffeination systems. What does "decaffeinated" mean for the law?

Took the two day advanced barista course and it exceeded my expectations. Great teachers, great content, and even though it was a short course we got plenty of time to practice actual coffee making without sparing milk. And a bonus is the opportunity to meet coffee students from all over the world, that most likely share similar goals to yours. Highly recommend for anyone getting into coffee business.

I've attended many courses at Espresso Academy Firenze and I loved it! The staff is incredibly friendly and the courses very nice structured. Theory and lots of practice and we could even visit the roastery! The whole place smells of coffee :) During the pandemic I've also attended a couple Online Courses which were great and the teacher answered all the questions. I totally recommend going there to learn about coffee and become friends with the most amazing teachers :) Hope to see you soon guys!!
