The Espresso Academy's coffee brewing class aims to provide both amateurs and specialty baristas with the skills to manage various extraction techniques at the best, both in a coffee shop or in a domestic environment. The courses cover from basic concepts like strength and extraction to the use of tools like V60 and Chemex. A large part of the course is dedicated to the different cold coffee brewing methods, and even to classic methods like Turkish coffee and moka.
All courses are held in Florence, one of the most beautiful cities of Italy and are led by authorized SCA and IBC trainers.

COFFEE BREWING BASIC COURSE / FOUNDATION SCA.
One day. Florence - January 11th, February 13th or March 13th 2025
A complete class, perfect for beginners barista or home coffee passionate.
The course starts with fundamental brewing concepts: ideal cup, turbulence, TDS and so on.
Subsequently, it alternates between theoretical and practical sessions on various tools: from V60 and Chemex to ibrik, moka, and various cold brew methods. Multiple practical tests aid in understanding the effects of varying grind size, extraction temperature and other variables.
COFFEE BREWING INTERMEDIATE COURSE SCA.
Two days. Florence - January 17th and 18th 2025
Designed for baristas operating in a professional setting like a specialty coffee shop. The intermediate brewing SCA course goes deeper into using extraction charts and refractometers as practical tools for mastering strength and extraction in coffee infusion or percolation methods.
The course is predominantly hands-on, involving the extraction of various types of coffee, both commodity and specialty, with different techniques and tools
COFFEE BREWING PROFESSIONAL COURSE SCA.
Three days. Florence - March 3rd, 4th and 5th 2025
Looking to reach the highest levels in coffee brewing training? This three-day intensive course leads to the SCA professional exam. Three days of testing how different water temperatures, pre-infusion, grind size, and turbulence can affect our extraction position on the Brew Control Chart.
Significant focus is given to studying water and its extraction impact, as well as measuring grind size in microns.A highly comprehensive course for those aiming for top-quality standards.

When we brew coffee, we transform water into a dark, intense liquid rich with wonderful aromas—a process known as extraction. During this process, water dissolves approximately 20% of the coffee bean’s soluble compounds.
Exceeding this percentage leads to over-extraction, resulting in bitter and astringent flavors. Extracting less, on the other hand, leads to under-extraction, producing acidic and watery coffee.
